Max and his family emmigrated from Italy and have always been in the restaurant business. He took the many skills he learned from them to the next level after attending the Culinary Institute of America. Max’s 31, a Trattoria is an Italian restaurant, leading the way in a culinary arts. Proclaimed by many to be the best chef in New Jersey, Chef Max DeMarchi blends earthy seasonal flavors and bold ingredients to create exquisite contemporary cuisine.

Established in 1999, he has produced an elegant interior with exceptional service and world class cuisine in his restaurant. It is informal, featuring wonderfully prepared foods to go like pizza, seafood and pastas with daily specials and many of the Italian specialties we’ve come to love. He does extensive catering through his kitchen as well. Max goes to Philadelphia twice weekly to buy the freshest ingredients to serve to you. So, come and enjoy!
